Beef Stuffed Avocado
INGEDIENTS: (serves 2)
1 lb ground beef
1 avocado (cut in half lengthwise)
1 cup kale (chopped)
1 clove garlic (minced)
1 tsp. thyme
1/2 tsp. turmeric
Sea salt and black pepper to taste
1. Cook ground beef over medium heat for 5 minutes.
2. Add garlic, spices and salt. Once spices become fragrant add kale and continue cooking until beef is completely cooked.
3. Place avocado half on a plate and fill/top with cooked beef. Add fresh ground black pepper.
