Italian Coleslaw

Italian Coleslaw

INGREDIENTS: (serves 4)

2 cups purple cabbage

2 large carrots

1 green onion

½ cup fresh parsley

¼ avocado

3 tbsp. olive oil

2 tbsp. lemon juice

1 tbsp. apple cider vinegar

¼ tsp. sea salt

INSTRUCTIONS:

1. Chop larger ingredients into smaller chunks then place all ingredients into a food processor and process until vegetables are finely chopped.

2. Store in the fridge and use throughout the week. Just add a protein of your choice to this dish to make it a complete meal.
