Breakfast Salad


3 cups salad greens

1 tomato (chopped)

1/4 cup pickled beets (sliced)

1/2 avocado (chopped)

1 small shallot (chopped)

2 tbsp. olive oil

1 tbsp. balsamic vinegar

1 tsp. apple cider vinegar

1 tsp. oregano flakes

Sea salt & black pepper

Mix all ingredients together and top with two fried eggs. Add some fresh blueberries and a pickle on the side.
