Tiramisu Avocado Mousse
INGREDIENTS: (serves 1)
1 ripe avocado
1 frozen banana
1 shot espresso (cooled)
1/4 cup (or less) full fat coconut milk
1 tsp cacao powder
1/2 tsp cinnamon
Pinch of stevia, a couple of dates or 1 tsp. maple syrup for added sweetness
Blend all ingredients using a high powdered blender.
The mousse should be thick and creamy. Best to start with less coconut milk and add more if need be to ensure is doesn’t turn out too runny.
Toppings (optional): Cacao nibs, shredded coconut, cacao powder
Serve immediately or chill in fridge/freezer.
