Fresh Tuna Wrap

One of my quick go-to meals during the week consists of a can of wild albacore tuna mixed with whatever I find hiding in my fridge and cupboards.

I mix all ingredients together and toss it on my favourite gluten and grain free wrap from Live Organic Foods (see below).

Voila! Simple to prepare and satisfies my hungry belly. Oh, and super healthy – of course!

Fresh Tuna Wrap

INGREDIENTS: (serves 1)

1 can wild albacore tuna

1 Super Green Wrap (from Live)

1 handful arugula (chopped)

1 oz. broccoli sprouts

1/2 lemon (juice only)

1 tbsp. yellow mustard

1 tsp. extra virgin olive oil

1/2 tsp. fennel seeds

Sea salt and black pepper

INSTRUCTIONS:

1. In a bowl, mix together tuna, arugula, sprouts, lemon juice, mustard, oil and spices.

2. Add tuna mixture to the center of the wrap, fold and enjoy!
