Fried Eggs & Broccoli Sprouts on Coleslaw

Fried Eggs & Broccoli Sprouts on Coleslaw

INGREDIENTS: (serves 1)

2 eggs (pastured or free-run)

1 cup homemade coleslaw (try Creamy Dill or Italian)

1 oz. broccoli sprouts

1 tbsp avocado oil

Sea salt and black pepper to taste

INSTRUCTIONS:

1. Heat oil in pan and fry two eggs sunny side up. Add salt and pepper.

2. Place coleslaw on a plate and top with fried eggs and broccoli sprouts.
