That’s right – I’m not much of a baker, but every once in a while I get the urge to test out a new muffin or cookie recipe so I have something to dunk into my morning espresso ?

Here’s a simple cookie recipe that’s gluten and grain free. It reminds me of a shortbread cookie, but with a chocolate chunk twist!

Chocolate Chunk Coconut Cookies

INGREDIENTS: (makes roughly 16 cookies)
4 eggs
1/2 cup ghee or butter (melted)
2 tbsp honey (more for added sweetness)
3 tsp espresso or coffee
2 tsp vanilla extract
2/3 cup coconut flour
1/2 cup chocolate chunks (85% cacao)
1/2 tsp sea salt

1. Combine all wet ingredients in a bowl and whisk together.
2. Stir in coconut flour and sea salt.
3. Mix in chocolate chunks.
4. Form 16 or so cookies and place on baking sheet with parchment paper.
5. Bake at 350 for 12-14 minutes.
